
These coconut flour cookies are delicious! Tastes very much like apple pie!
They are Gluten free, sugar free, dairy free, preservatives-, artificial flavourings and colourings free
Ingredients:
- 1/3 cup coconut flour
- 1/4 cup coconut oil, melted Organic Extra Virgin Coconut Oil
- 1/4 cup Fresh Medjool Dates water mix
- 1/4 teaspoon salt
- 2 whole eggs (BGS replaces 1 egg with 1 teaspoon Psyllium Husks Gluten Free and 3 teaspoons filter water)
- 1/3 cup preservative-free raisins and cranberries
Remember to always rinse your Medjool dates, raisins and cranberries with sodium bicarbonate for at least 12 minutes. Rinse with fresh water before using.
Method:
- Preheat your oven to 180 °C
- Line a baking sheet with parchment paper
- Blend Fresh Medjool dates with water in a Nutribullet
- In a medium bowl, whisk together the coconut flour, coconut oil, blended Medjool dates, salt and eggs until a uniform batter is created. The batter will start off a bit runny but will thicken as the coconut flour starts to absorb the moisture. Add in the preservative-free raisins and cranberries and stir to distribute them evenly.
- Bake at 180 °C for 12 – 14 minutes, until the edges are golden brown.
- Allow to cool on the pan for 10 minutes, then transfer to a wire rack to cool completely.
