Coconut flour cookies (gluten free)

These coconut flour cookies are delicious! Tastes very much like apple pie!

They are Gluten free, sugar free, dairy free, preservatives-, artificial flavourings and colourings free

Ingredients:

Remember to always rinse your Medjool dates, raisins and cranberries with sodium bicarbonate for at least 12 minutes. Rinse with fresh water before using.

Method:

  1. Preheat your oven to 180 °C
  2. Line a baking sheet with parchment paper
  3. Blend Fresh Medjool dates with water in a Nutribullet
  4. In a medium bowl, whisk together the coconut flour, coconut oil, blended Medjool dates, salt and eggs until a uniform batter is created. The batter will start off a bit runny but will thicken as the coconut flour starts to absorb the moisture. Add in the preservative-free raisins and cranberries and stir to distribute them evenly.
  5. Bake at 180 °C for 12 –  14 minutes, until the edges are golden brown.
  6. Allow to cool on the pan for 10 minutes, then transfer to a wire rack to cool completely.
